Tropical Fruit Salsa

Ingredients:
-1 tablespoon chopped fresh cilantro
-1/2 tablespoon fresh lime juice
-1/2 tablespoon white wine vinegar
-1 teaspoon minced jalapeno pepper
-1/2 teaspoon extra-virgin olive oil
-1/8 teaspoon salt
-freshly ground pepper
-1/2 medium mango, cut into small cubes
-1/4 small papaya, cut into small cubes
-1/3 cup chopped red onion
-1/4 cup fresh pineapple cubes
-1/2 small red bell pepper, chopped
1. Stir together the cilantro, lime juice,vinegar, jalapeno, oil, salt, and pepper in a bowl
2. Add the mango, papaya, onion, pineapple, and bell pepper; toss to combine
3. Let stand about 1 hour at room temperature to blend the flavors
4. If not serving immediately, cover and refrigerate up to 1 day
5. Return to room temperature before serving
