Ingredients:

-1 tablespoon chopped fresh ginger
-2 cloves garlic, chopped
-1 teaspoon curry powder
-2 teaspoons fresh lemon juice
-1/2 teaspoon paprika
-1/2 teaspoon salt
-1/8 teaspoon ground cinnamon
-1/8 teaspoon cayenne
-1 1/2 pounds salmon fillet with skin on, cut into 4 pieces

Sauce:
-1 cup plain yogurt
-1 cucumber, peeled, seeded and chopped
-3 tablespoons fresh chopped mint
-1 tablespoon olive oil
-1/4 teaspoon salt
-1/8 teaspoon black pepper

1. To make the sauce, in a small bowl combine yogurt, cucumber, mint, olive oil, salt and pepper
2. Cover and refrigerate until ready to serve
3. In a small bowl, mix together ginger, garlic, curry powder, lemon juice, paprika, salt, cinnamon and cayenne
4. Place salmon in a microwave-safe bowl
5. Spread ginger-curry mixture over salmon
6. Cover with plastic wrap and microwave on high for 5 minutes
7. Let rest for a few minutes
8. Slip spatula underneath skin and lift salmon off
9. Serve salmon with yogurt sauce on the side
10. If desired, serve with white rice and cooked vegetables
