Ingredients:

-8 slices white bread
-2 cups shredded sharp cheddar cheese
-8 slices plum tomatoes
-1/4 cup thinly sliced fresh basil

1. Place 4 bread slices on a work surface; arrange 1/2 cup cheese on each slice
2. Top each slice with 2 tomato slices and 1 tablespoon basil
3. Top with remaining 4 bread slices
4. Heat a large nonstick skillet over medium heat
5. Coat pan with cooking spray
6. Add sandwiches to pan; cook 5 minutes
7. Turn sandwiches over; cover and cook for 2 minutes or until cheese melts
