Ingredients:

-8 medium beets, trimmed and scrubbed
-2 tablespoons olive oil
-6 cloves garlic, minced
-6 cups salad greens
-3 tablespoons prepared balsamic vinaigrette

1. Preheat oven to 400 degrees F
2. Toss together beets, olive oil, and garlic in a baking dish
3. Bake 40 minutes, or until beets are tender; cool
4. Scrape skin from beets with paring knife
5. Slice into rounds
6. Toss greens with vinaigrette
7. Divide among plates, top with beets, and serve
