Grilled Thai Chicken Salad

Thai Dressing Ingredients:
-2 tablespoons fresh lime juice
-4 teaspoons Asian fish sauce (nuoc nam)
-1 tablespoon reduced-sodium soy sauce
-1 teaspoon sugar
Chicken Salad Ingredients:
-4 large skinless, boneless chicken thighs (about 1 1/2 pounds)
-2 tablespoons Thai seasoning
-2 bags (10 ounces each) torn romaine lettuce halves
-2 cups loosely packed fresh mint leaves
-2 papayas or mangoes or 1 of each, peeled, seeded, and sliced
-2 green onions, sliced
1. Prepare outdoor grill for direct grilling over medium heat.
2. Prepare dressing: In cup, combine lime juice, fish sauce, soy sauce, and sugar; set aside.
3. Prepare chicken salad: In medium bowl, toss chicken with Thai seasoning.
4. Place chicken on hot grill rack over medium het; grill, turning once, until juices run clear when thickest part of thigh is pierced with tip of knife, 10 to 12 minutes.
5. In large bowl, toss lettuce, mint, papaya, and green onions with dressing.
6. Thinly slice chicken.
7. Divide salad among 4 dinner plates. Top with chicken slices.
