Ingredients:

-1 1/4 cup couscous
-1/4 cup lemon juice
-1 tablespoon olive oil
-2 bell peppers, chopped
-1 can (15 oz) chickpeas, drained and rinsed
-1/2 cup crumbled feta cheese
-herbs for garnish

1. Bring 1 3/4 cups of hot water to a boil in a saucepan.
2. Add the couscous, cover and turn off the heat.
3. Let stand 5 minutes, then fluff with a fork and transfer to a large bowl.
4. Add the lemon juice to the couscous and toss.
5. Add the oil and toss again to coat.
6. Mix in the peppers, chickpeas, and cheese.
7. Garnish with herbs.
8. Serve immediately.
