Ingredients:

-2 tablespoons rice vinegar
-1 tablespoon soy sauce
-1 tablespoon vegetable oil
-1 cucumber, peeled and sliced
-salt and freshly ground black pepper

1. In a serving bowl, combine vinegar, soy sauce and oil
2. Add cucumber and toss to combine
3. Season with salt and black pepper
