Ingredients:

-1/2 cup olive oil
-1 large onion, chopped
-1 garlic clove, chopped
-2 celery stalks, chopped
-2 carrots, peeled and chopped
-1/2 teaspoon salt
-1/2 teaspoon black pepper
-2 (32-ounce) cans crushed tomatoes
-4 dried bay leaves

1. In a large pot, heat the oil over a medium-high heat
2. Add the onions and garlic and saute for about 10 minutes
3. Add the celery, carrots, salt and pepper
4. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour
5. Remove and discard the bay leaves
6. Season the sauce with more salt and pepper, if needed
