Ingredients:

-1/2 cup sunflower seeds
-4 cups arugula (from 2 large bunches), heavy stems removed
-6 tablespoons olive oil
-3 tablespoons fresh lemon juice
-2 cloves garlic, peeled
-salt
-pepper

1. Toast sunflower seeds in dry skillet 5 minutes
2. Transfer to food processor
3. Add arugula, olive oil, lemon juice, and garlic, and process until smooth
4. Season with salt and pepper
