Ingredients:

-1 cup ricotta cheese
-2 tablespoons confectioners’ sugar
-grated peel of 1 lemon
-4 cups vanilla ice cream, slightly softened
-1 (9-inch) prepared graham cracker crust
-1-1/2 cup blueberry or cherry pie filling

1. Combine ricotta, confectioners’ sugar and lemon peel; mixing well
2. Gently mix in ice cream
3. Spoon into prepared pie crust
4. Freeze at least one hour
5. Top with pie filling just before serving
