Ingredients:

Crust
-1 1/2 cups graham cracker crumbs
-1/3 cup brown sugar
-1/2 teaspoon ground cinnamon
-1/4 cup unsalted butter (softened)

Butter the bottom of a 10-inch springform pan. Mix crumbs, sugar, cinnamon, and butter well. Press evenly into bottom of pan, and bake at 350 degrees for 10 minutes. Set aside.

Filling

-4-8 oz. packages cream cheese
-1 cup sugar
-5 eggs
-2 1/2 teaspoon vanilla extract
-3 tablespoons flour

Cream the cheese and sugar first, then beat in eggs, one at a time. Add vanilla nad flour; mix well. Pour into pan and bake at 350 degrees for 1 1/2 hours. When done, remove and turn the oven up to 500 degrees.

Topping

-1 1/2 cup sour cream
-1 teaspoon vanilla extract
-1/2 cup sugar

Mix sour cream, vanilla, and sugar well. Spread on top of cheesecake. Bake at 500 degrees for 5 minutes. Cool, chill, and serve plain or with fresh berries.
