Cranberry Scones

Ingredients:
-3 cups flour
-1/2 cup sugar
-1 1/2 tablespoons baking powder
-1 tablespoon lemon zest
-3/4 teaspoon salt
-1/2 cup cold butter (1 stick)
-3/4 cup light cream, plus more for brushing
-2 large eggs
-1 1/2 cups chopped dried cranberries

1. Preheat oven to 425 degrees F
2. Coat baking sheet with cooking spray
3. Combine flour, sugar, baking powder, lemon zest and salt in a bowl
4. Cut butter into small pieces, then blend into flour mixture using your fingers until mixture resembles coarse meal but a few large lumps remain
5. Whisk together cream and eggs
6. Stir into flour mixture with wooden spoon until soft dough forms
7. Fold in dried cranberries
8. Turn out dough onto floured surface
9. Knead 3 to 4 times, or until smooth
10. Pat into 12X12 inch square
11. Cut into 18 triangles
12. Place scones on prepared baking sheet
13. Brush scones with cream
14. Sprinkle with sugar
15. Bake 12 to 15 minutes, or until light brown on top
16. Serve warm
