Ingredients:

-2 cups flour
-1/2 cup sugar
-2 teaspoons cinnamon
-1/2 teaspoon baking soda
-1 teaspoon salt
-3/4 cup oil
-2-1/2 tablespoons vanilla
-3 eggs, beaten
-1 cup chopped ripe mango
-1 cup raisins
-1/4 cup chopped macadamia nuts
-1/2 cup shredded coconut

1. Preheat oven to 325°F
2. Sift flour, sugar, cinnamon, baking soda and salt into a large mixing bowl
3. Mix in oil, vanilla and eggs until well blended
4. Stir in mango, raisins, macadamia nuts, and shredded coconut
5. Spread mixture in a greased 9×9-inch cake pan
6. Bake for 1 hour or until toothpick inserted in middle comes out clean
7. Cool for at least 25 to 30 minutes before serving
