Blueberries and Cream Scones

Ingredients:
-2 cups all-purpose flour
-2 teaspoons baking powder
-1/3 cup sugar
-1/3 cup cold butter, cut into pieces
-3/4 cup whipping cream
-1 1/2 teaspoons vanilla extract
-1/2 cup frozen blueberries
-1 teaspoon whipping cream
1 tablespoon granulated sugar
1. Preheat oven to 425 degrees
2. Combine flour, baking powder and sugar in a bowl
3. Cut in butter with a pastry blender or 2 forks until crumbly
4. Stir in 3/4 cup whipping cream and the vanilla until dry ingredients are moistened
5. Gently fold in blueberries
6. Turn dough out onto a lightly floured surface
7. Pat dough into an 8″ cirle on a light greased baking sheet
8. Cut into 8 wedges, using a sharp knife (do not separate wedges.)
9. Brush wedges evenly with 1 tablespoon whipping cream
10. Sprinkle with granulated sugar
11. Bake at 425 degrees for 25 to 30 minutes or until golden brown
