Radish, Radicchio & Fennel Salad

Ingredients:
-1/2 cup pine nuts
-1 large head radicchio, quartered and thinly shredded
-6 red radishes, finely sliced
-1 fennel bulb, trimmed, halved, and finely sliced
-1 large cucumber, sliced
Lemon-Mint Dressing:
-1/2 cup fresh mint leaves
-1/4 cup fresh lemon juice
-1/4 cup extra-virgin olive oil

Arugula Pesto

Ingredients:
-1/2 cup sunflower seeds
-4 cups arugula (from 2 large bunches), heavy stems removed
-6 tablespoons olive oil
-3 tablespoons fresh lemon juice
-2 cloves garlic, peeled
-salt
-pepper
1. Toast sunflower seeds in dry skillet 5 minutes
2. Transfer to food processor
3. Add arugula, olive oil, lemon juice, and garlic, and process until smooth
4. Season with salt and pepper

Ingredients:
-1/2 cup freshly grated Parmigiano-Reggiano cheese
-1/2 cup fresh parsley leaves
-1/4 cup fresh basil leaves
-1/4 cup capers, drained
-1 teaspoons grated lemon rind
-3 teaspoons fresh lemon juice

Pomegranate Cocktail

Ingredients:
-4 cups crushed ice
-2 cups pomegranate juice
-1/2 cup ginger ale
-1/4 cup brandy
-1 (750ml) bottle sparkling wine
1. Combine all ingredients in a pitcher
2. Pour about 1 cup of the mixture into each of 8 glasses

Raspberry Mojito

Ingredients:
-handful fresh mint leaves
-3 whole fresh raspberries
-juice of 1 lime
-2 teaspoons sugar
-ice
-1 1/2 ounces spiced rum
-splash club soda
